Perfect homemade tacos stuffed with legumes
Taco- a Mexican beauty! It is a traditional Mexican dish which is usually made of wheat flour or corn tortillas folded or moulded in the shape of tacos.
Now, the filling can be pretty much anything! Take a look at your refrigerator and invent the filling there and then!
Doesn’t matter you made them before or not! You’ll be able to make great-tasting Tacos!

A FANTASTICO TACOS IS COMPOSED OF THREE ELEMENTS:
Pico de Gallo/Salsa Fresca!
A creamy dip or sauce!
The first thing is filling, the main project here which needs to have a little more attention than other two.
Step 1- Go to your refrigerator, take a look at leftovers, the fresh veggies and the fruits.Pick anything of your choice and start making Tacos!

Filling can be majorly divided into two-
Vegetarian filling ( The recipe I will provide below )
Non-Vegetarian filling ( I will provide best links )
C’mmon Vegetarians and Vegans- We will start with how to make taco filling- no meat no dairy!
It can be Crispy Chickpeas Tacos, Mashed Kidney Beans Tacos or all veggies!
Make sure these are all cooked well before starting to make the stuffing. The recipe is easy and quick. All you need is some chopped onions, some tomato puree, few regular spices and you’re done!
I will share this recipe down below with the list of Ingredients and Instructions to cook.
This recipe is good for both Chickpeas and kidney beans( legumes).
If you want to go for totally fresh version, skip legumes and chop up some romaine lettuce, zucchini, onions, corn, drizzle some lime juice over it and you are good to go!

The most traditional one is made from Ground beef, slowly cooked for around 4-5 hours in a slow cooker.
You can combine beef with some pineapple as well, the combination is mind-blowing!

The easiest- How to make Indian-Vegetarian Pico De Gallo
After making the filling, take tomato, onions, jalapenos, fresh parsley/coriander, chop them up into fine bite size dices and drizzle some lime juice over it, a pinch of black rock salt. Tada! Pico de Gallo is ready to serve…
Pico De Gallo brings freshness to our tacos also it gives a nice crunch with slightly lemony tangy flavours. Black rock salt is a game changer here, don’t dare to miss on it!
Traditional salsa might have a thinner consistency, while Pico De Galo is chunky and uncooked!
This is so easy and looks absolutely beautiful if you cannot handle the heat skip jalapenos, use some other peppers(less spicy).
This works as a perfect side dish, totally in love with it!
Time to make a dip or sauce for our gorgeous Tacos-
I made a traditional yoghurt dip which includes Greek yoghurt, some really fine chopped onions, some fresh and finely chopped cilantro with a pinch of salt and pepper. As easy as that! Adjust the seasonings, the way you like it..lovely isn’t! 😀
Sour cream could be an option too…

Oh my god, I almost forget to let you know how to make homemade Taco shells at home. I have written a separate blog for it. If you need to know, just click and the recipe will be at your doorstep-knocking-waiting- when will you make those yellow yellow goodies :roll:
As I mentioned earlier, I am now going to describe the recipe for Kidney beans stuffing, so easy and quick!
1 cup boiled mashed kidney/chickpeas/any type of legumes
1 big onion finely chopped
2 ripe tomato puree
4 cloves garlic chopped/1 tablespoon garlic powder
1/4 cup cilantro/parsley finely chopped
1 tablespoon salt or to taste
1 tablespoon crushed Black pepper
1/2 tablespoon paprika
1/2 tablespoon Cumin seeds powder
1 teaspoon tomato ketchup
1 tablespoon vegetable Oil
Directions to cook Vegan Mexican Taco Recipe:
- Take a pan, add oil, chopped onion. Saute for a minute or so.
- Add boiled kidney beans. Cook for around a minute more. Add all spices. Cook another 1 minute.
- Add tomato puree, cook for 3-4 minutes.
- Once the mixture comes to thicken up, turn the flame off. Check the consistency should be good to put inside the taco shell.
The cutest part- Assembling Authentic Mexican Tacos
Take a taco shell.
Put 1 tablespoon/as per liking of filling, spread using a spatula.
Put 1 tablespoon/as per liking of Pico De Gallo
Drizzle your choice of dip/sauce
